Pastry Chef - Multi Unit Venue

POSITION OVERVIEW: 

Nellcote & RM Champagne Salon at 833 W. Randolph is in need of Pastry Chef who can skillfully lead a pastry kitchen in support of the Executive Chef.  Responsible for the creation and production of baked goods, pastries and desserts for the restaurant.  Responsible for assisting in the hiring, training and development of a pastry team.

WHO YOU ARE:

  • 3+ Years experienced as a Pastry Chef or Pastry Cook
  • Ability to maintain production in a high- volume kitchen
  • Energetic & Team-Oriented
  • Experienced with scratch baking
  • Able to take initiative and problem solve
  • Excellent verbal and written communication skills
  • Able to actively engage in conversations with employees, fellow managers, and superiors
  • Able to present oneself as well as the company in a professional manner
  • Education: a culinary degree or equivalent experience and/or training
  • Preferred availability between 6am - 9pm

JOB RESPONSIBILITIES: 

  • Creating and maintaining all dessert menus & recipes used in the restaurant
  • Preparation, presentation, and service of all dessert menus and food items
  • Assist with training, supervising, and developing all members of the Heart of House (HOH) culinary team
  • Work with the General Manager & Executive Chef in setting the direction of the business in day-to-day operations
  • Planning and growing the business. Driving sales. Managing costs.
  • Work with the management team on all financial aspects of the HOH
  • Directly interact and lead all employees of the HOH with respect and fairness
  • Identify, train, and develop key employees for growth, advancement, & promotion
  • Develop and maintain recipe books which become property of Element Collective
  • Safely and efficiently use knives, utensils, and other tools & equipment necessary to complete preparation of menu items
  • Prepare ingredients needed for recipes of the dessert menu
  • Observe and practice all safety and sanitation guidelines & procedures
  • Commit to long hours of work to complete tasks when necessary
  • Measure and mix ingredients according to recipes
  • Observe and test foods being cooked by tasting, smelling, and taking temperature
  • Conduct Front of House & HOH food trainings to improve employee knowledge with the Executive Chef
  • Accept direction and constructive criticism from peers and superiors
  • Punctual in regards to scheduling and attendance policy

PHYSICAL DEMANDS + WORK ENVIRONMENT: 

  • Perform and lead calmly and effectively in a busy environment
  • Ability to stand and walk an entire shift
  • Communicate in English in order to comprehend, follow, & perform job requirements in written and spoken direction 
  • Be able to work a variety of hours, days & shifts, including weekends and increased work schedules
  • Ability to work in a confined, crowded space of variable noise and temperature levels
  • Exposure to extreme heat
  • Lift and move up to 10 pounds, frequently lift and/or move up to 25 pounds, and occasionally lift and/or move up to 50 pounds
